Pretzel Dumplings with Creamed Chanterelle - Brezelknödel

Our annual Christmas party with the German American Saturday School always takes place at Esther's, my favorite bakery here on the Peninsula. The get together and the food was a treat, as always. And I had another treat this time : Esther gave me two bags full of Laugenbrezeln ( pretzels ) to take home :D


Time to make dumplings. usually, I make bread dumplings, which everybody loves, but, since I had no recipe for pretzel dumplings, I asked around a little bit. The folks over at Leite's Culinaria What's for dinner facebook page were eager to help, Luisa found a recipe on the Delicious Days blog. It sounded pretty similar to my regular dumpling recipe, so I gave it a try.


Chanterelles, which I got at Sigona's in great quality, are not really seasonal anymore. You can get them more or less year round. Though, I prefer to buy them only in fall, it has a certain appeal to me to still cook seasonal ( and yes, no blueberries or strawberries in winter ;) )

It really is not that complicated or time consuming. Took me about 30 minutes ( without the soaking for the pretzel slices ), and dinner was ready.

Unsere Weihnachtsfeier der deutschen Samstagsschule bei Esther's, der deutschen Bäckerei in Palo Alto, hat wieder großen Spaß gemacht. Und diesmal gab's noch eine besondere Überraschung. Beim Gehen drückte mir Esther noch zwei Tüten mit Laugenbrezeln in die Hand : freu !

Ich mache öfters normale Knödel, aber für Brezelknödel hatte ich kein Rezept. Nach ein bisschen Herumsuchen und Hilfe von Freunden, fand ich ein Rezept bei Delicious Days. Es hörte sich sehr ähnlich wie meine normalen Knödel an, so probierte ich es aus. Dazu gab's Pfifferlinge, die zwar inzwischen fast das ganze Jahr über zu kaufen sind. Ich mache sie trotzdem nur im Herbst, weil ich es wichtig finde, beim Kochen auch ein bisschen die Saison von Lebensmitteln im Auge zu behalten. Nein, auch keine Blau- oder Erdbeeren im Winter ...

=========================== DUMPLINGS ===========================
200-250     grams  Old pretzels(~4 small pretzels), sliced
    150        ml  Hot milk
      1   tablesp. Butter
     30     grams  Bacon, finely chopped
      1     small  Onion, finely chopped
      2            Eggs
                   Fresh parsley, chopped
                   Salt, freshly ground black pepper, nutmeg
                   Additional milk or breadcrumbs, if necessary

========= CREAMED CHANTERELLE MUSHROOM SAUCE (SERVES 2) =========
      1   tablesp. Butter
    1-2            Shallots, finely chopped
    250     grams  Chanterelles, cleaned
100-200        ml  Vegetable broth
    100        ml  Double cream (or heavy cream)
                   Optional: 2 tbsp cognac or sherry
                   Salt, freshly ground black pepper, nutmeg
                   Fresh parsley, finely chopped
                   For decoration: fresh chives, finely chopped

Prep time: 30min., cooking: 15-20min.

Remove the coarse salt from the dry pretzels (one or two days old).
Cut them in slices or little cubes, the thinner, the better. Put in
a large bowl with hot milk, briefly stir and let rest for half an
hour until all pieces are soaked.

Heat the butter in a small pan, add chopped bacon and onion and
sauté over medium heat for one or two minutes. Then add to the
pretzel mix together with the two eggs, the chopped parsley and the
spices. Knead thoroughly with your hands and season to your liking.
If the mixture is too firm, add some more milk, if it is too soft,
some breadcrumbs will help.

Bring water to a boil in a large pot, add a decent pinch of salt.
Occasionally wet your hands with cold water (to prevent the dough
from sticking to your fingers) and take a handful of the mix forming
equally sized dumplings. Carefully let them glide into the now
simmering water. Let simmer for 15 to 20 minutes, depending on their
size.

Meanwhile prepare the chanterelle sauce: Clean the chanterelles, cut
large ones in smaller pieces.

Heat the butter in a large pan, add the chopped shallot, sauté over
medium heat for one or two minutes, then add the chanterelles.
Stirfry briefly, then deglaze with broth and double cream (or heavy
cream). Refine it -optionally- with a dash of cognac or sherry and
season to taste with salt, freshly ground black pepper and nutmeg.
Add the chopped parsley just before serving.

Decorate the assembled dish with fresh chopped chives.

Roasted pretzel dumplings

In case you have leftovers (dumplings only) - and we make sure to
always have some - , keep them in the fridge over night (wrapped in
foil). They're perfect for one of my favorite 5-
minuteleftoverdishes: Slice and pan-fry them in butter together with
chopped onions and bacon. Then add a couple of eggs, fresh chives
and salt and pepper, stir until everything sets. Best served in the
hot pan. This is what you will get on Bavarian menus under the term
"Knödelgröschtl".

200-250     Gramm  Brezeln, 1 Tag alt ( ca. 4 Stück )
    150        ml  Milch, kochend
      1      Essl. Butter
     30     Gramm  Speck, klitzeklein
      1     klein. Zwiebel, klitzeklein
      2            Eier
                   Petersilie, frisch, klitzeklein
                   S+P, Muskat
                   Evtl. etwas mehr Milch oder Brösel

===================== PFIFFERLING RAHMSAUCE =====================
      1      Essl. Butter
    1-2            Shalloten, klitzeklein
    250     Gramm  Pfifferlinge, geputzt
100-200        ml  Brühe
    100        ml  Sahne
                   Optional: 2 EL Kognak oder Sherry
                   S+P, Muskat
                   Petersilie, frisch, klitzeklein

Prep time: 30min., Kochzeit: 15-20min.

Reibe zuerst das grobe Salz von den Brezeln ab, und schneide sie in
dünne Scheiben, ca. 5 mm dick. Brezelscheiben in eine große Schüssel
geben, die kochende Milch darüber gießen und 30 Minuten stehen
lassen. In der Zwischenzeit die Butter in einer Pfanne erhitzen, und
den Speck und die Zwiebeln darin anschwitzen. Die Petersilie zugeben
und kurz mitbraten, etwas abkühlen lassen. Die Zwiebelmasse, die
Eier und die Gewürze zu den Brezelscheiben geben, würzen und gut
durchkneten. Die Masse sollte ziemlich homogen werden. Mit nassen
Händen Knödel formen. In der Zwischenzeit reichlich Wasser zum
Kochen bringen, aggresiv salzen. Hitze zurückschalten und die Knödel
in das leise siedende Wasser gleiten lassen. 15 - 20 Minuten ziehen
lassen. bis sie gar sind. In der Zwischenzeit die Pfifferling Sauce
zubereiten : dafür die Butter in einer weiten Pfanne schmelzen
lassen und die Schalotten darin anschwitzen. Pilze zugeben und kurz
braten. Mit Cognac ablöschen, dann Brühe und Sahne zugeben, und die
Pilze für etwa 10 Minuten leise köcheln lassen. Petersilie kurz vor
dem Servieren zugeben und Sauce abschmecken. Knödel aus dem
Kochwasser nehmen, gut abtropfen lassen und in tiefen Tellern mit
der Sauce und Pilzen anrichten. Zur Deko mit Schnittlauchröllchen
garnieren.
